Production area: Central Sicily in an area characterized by cold winters and hot summers with a good temperature range between day and night
Fermentation: in steel, at a controlled temperature. Maceration in contact with the skins for about 20 days. Malolactic fermentation carried out.
Aging: 18 months in French oak barrels. Further 12 months in the bottle follow
Alcohol: 14.0% vol
Pairing: Throughout the meal, it goes well with elegant meat dishes. Excellent on roasts and medium-aged cheeses.

Production area: Regaleali Estate Inzolia 500 m s.l.m, Sauvignon 700 m s.l.m. Vineyard exposure: South-West.
Soil composition: Inzolia on calcareous clay soils, Sauvignon on fine-grained sandstone sands.
Training System: Guyot
Vinification: Cold maceration of Sauvignon grapes, for all fermentation in stainless steel tanks.
Aging: In steel vats in the presence of yeasts for 4-5 months, in bottles for 6 months
Pairing: Appetizers and Appetizers, Meats, Pasta and Soups, Fish, Eggs
