5-7 days of maceration in temperature-controlled rotary fermenters at 25-30°C. After the drawing off, it is decanted into stainless steel tanks for the precipitation of deposits, where it remains until the end of sugars and malolactic fermentations. Ageing occurs in used small French oak barrels, where the wine remains for 24 months. Then it is blended in steel tanks and stays there for 6 months, after which it is bottled and left to age for about a year before being placed on the market.

Intense ruby red in the glass with a fine and precise bouquet of cherries, small berries, jam red fruits, violets and sweet spices. In the mouth it confirms the elegance with a solid and full taste, balanced and persistent, completed by soft and amalgamated tannins. It ends with a long fruity finish.
Excellent pairing with red meats and roasted or stewed game. Ideal to accompany tasty preparations such as medallions of beef with green pepper, baked guinea-fowl, stewed wild boar stew with polenta.
MASSOLINO - DOLCETTO D’ ALBA DOC 2013
Massolino's Dolcetto d'Alba comes from vineyards located in the municipality of Serralunga d'Alba, in the province of Cuneo.
It is made exclusively from Dolcetto grapes, hand-picked in the second half of September. Fermentation takes place, with maceration in contact with the skins, for 7-9 days in stainless steel at a controlled temperature of 27-29 ° C. After malolactic fermentation, the wine matures briefly in the same containers, followed by a further 4 months of aging in the bottle.
It exhibits an intense ruby red color with purple reflections. The nose is characterized by fresh and fruity aromas, pleasantly sweet and elegant. On the palate it is ample and concentrated, vinous, with a pleasantly long aftertaste on fruity tones.
Perfect to pair with hors d'oeuvres based on cured meats or cheeses, it is fabulous with risottos, soups and red meats.
