3-piece carving set in its case.
It was made in the second half of the 19th century by the direct successor of the Gavet brand, master cutlery maker to the King in 1814; the brand was sold in 1834.
As usual the Gavet handles are made of mother-of-pearl. These 3 handles are superb, shiny, nicely iridescent and above all, not cracked.
The 3 handles are moulded using a pendulum press to imitate relief chasing (a technique invented by Gavet himself).
The engraving is perfectly embossed, without any flaws, and it follows a rather complicated pattern in comparison with similar designs.
Of course, the blades are engraved with the famous crowned "E" as well as the words "ancienne maison Gavet Languedocq (succession?) rue du 4 septembre 20" (meaning 20, 4 Septembre Street). See the zoomed in picture.

This carving set has an important and rare feature:
The carving fork has a kind of "push lever", mostly seen on knives and rarely on forks; it allows either to separate the tablecloth or the cutting board from the fork and create a kind of safety stop, or to keep the index finger pressed on the fork of the knife.
