Dominio del Águila is a winery created by Jorge Monzón and Isabel Rodero in 2010. Jorge began his winemaking studies in Bordeaux and continued his professional career through emblematic wineries such as Romanée-Conti and Vega Sicilia until he arrived at Arzuaga wineries.
They cultivate 30 hectares of vineyards in organic, the main variety planted is Tempranillo with other local varieties such as Bobal, Garnacha and Albillo on clay-sandy-rocky soils depending on the plot.
The old vineyard of more than 85 years is located in the same municipality of La Aguilera, is planted on sandy-calcareous soils at 900 meters altitude. The main variety of the vineyard is Tempranillo, but since it is an old vineyard there are also other minor varieties such as Bobal and Albillo among strains.
Dominio del Águila Canta la Perdiz is a wine made with Tempranillo and other red and white varieties mixed in one of the oldest vineyards in La Aguilera, with strains over 150 years old. This vineyard is located at 890 meters above sea level on sandy soils on the surface and limestones in depth.
The harvest is manual and all varieties are made together. Once the grapes are trodden with their feet, they are vinified in concrete tanks. Once the fermentation is finished, it is aged in French oak barrels for 30 months.
