Santi Santamaria asserts himself here as an advocate of traditional cuisine in the face of the rise of molecular gastronomy, illustrated by other Spanish or Catalan chefs. He later denounced the “déclin gastronomique méditerranéen” and defended “la cocina doméstica” (the cuisine “comme à la maison”).
This rare book takes in Spanish both the basics of his cuisine and the recipes that allowed him to rise as the first chef to receive three stars in Catalonia.
