Jean-Édouard Adam was the inventor of a distillatory method removing all the spirits from the wines that revolutionised wine production in the South of France, bringing him for a time economic prosperity before being ruined by the loss of the many lawsuits he had to support against his counterfeiters.

A square and a bronze statue made by the sculptor Vital-Dubray are dedicated to him in Montpellier in 1860. A street also got its name in his hometown.
